Simpsons Flaked Wheat

An unmalted adjunct that has a high protein content which gives foam stability, as well as greater mouthfeel and turbidity.

It is traditionally used by breweries in the UK somewhere between 5% and 10% of the grist for head retention and to supplement wort nitrogen.

Adding flakes to the mash gives a more drinkable beer and affects the flavour and colour, it gives a crisper mouthfeel to that of Wheat Malt.

Can be used up to 20-40 % without significant problems.

Mashable Adjuncts are another source of fermentable sugars which enhance the flavour, aroma, and colour of beer.

Adjunct grains can result in stuck mashes, especially when used in higher quantities.
