Tasting Notes

Winemaker’s Tip
During the first week of active fermentation, the grape skins will float and form a ‘cap’. Push it gently back down into the wine once or twice a day using a sanitised spoon or paddle — this is called ‘punching down’ and is essential for extracting colour, flavour, and tannin from the skins. Don’t skip it. Age this wine for at least 3–6 months after bottling — a year is even better.

- How long does this kit take?
- The winemaking process takes around 6 weeks before bottling. This style genuinely benefits from ageing — aim for at least 3–6 months in the bottle, with 12 months delivering the best results.
- Are the grape skins complicated to use?
- Not at all. They come in a mesh bag — sanitise the outside and place it in your primary fermenter with the juice. The instructions walk you through it clearly. You will need a larger primary fermenter (30L+) to accommodate the skins.
- Is this real Amarone?
- It’s an Amarone-style wine kit. Authentic Amarone della Valpolicella uses partially dried grapes under DOCG rules. This kit uses high-quality concentrate and grape skins to replicate that rich, concentrated flavour profile very effectively.
- Do I have to use the oak?
- Yes — the oak is integral to achieving the classic Amarone structure and flavour. The kit is designed with heavy oak in mind; reducing it may leave the wine feeling unbalanced.
