How to Make Wine From a Kit: Step by Step

1. Read the Instructions Before Starting

Check the required batch volume, temperature range, fermentation vessel size and the order in which each sachet is used. Do not assume that additives supplied with one brand are used in the same way as another.

2. Clean and Sanitise the Equipment

Clean away visible dirt first, then sanitise the fermenter, lid, spoon, hydrometer, syphon, airlock and anything else that will contact the must or wine. Rinse only when the product instructions say that rinsing is required.

3. Prepare the Must

Pour the grape concentrate into the fermenter and add water exactly as directed. Some kits require extra sugar and others do not. Mix thoroughly, but do not increase the batch volume or add sugar simply to raise the alcohol level; either change can unbalance the wine and stress the yeast.

If possible, record the starting gravity with a hydrometer. This provides a useful reference for monitoring fermentation and estimating alcohol by volume.

4. Add Yeast and Begin Fermentation

Check that the must is within the yeast or kit manufacturer's recommended temperature range before adding the yeast. Fit the lid and airlock as instructed, then keep the fermenter at a reasonably stable temperature away from direct sunlight.

Airlock bubbles can be reassuring, but they are not proof that fermentation is occurring. A lid or bung can leak while the wine ferments normally. Falling hydrometer readings are the reliable evidence.

5. Confirm Fermentation Has Finished

Do not bottle because a set number of days has passed, the airlock has stopped or the wine tastes dry. Take a hydrometer reading, then repeat it after the interval stated by the kit—commonly 24 to 48 hours. Fermentation is considered complete only when the gravity is at the expected finishing level and remains stable.

6. Stabilise, Degas and Clear

Once fermentation is confirmed complete, follow the kit's exact sequence for stabiliser, degassing and finings. Degassing removes dissolved carbon dioxide that can prevent a wine clearing properly. Stir or agitate only as instructed and avoid unnecessary splashing, which can introduce oxygen.

Stabilising ingredients do different jobs. Sulphite helps protect the wine from oxidation and microorganisms; potassium sorbate helps prevent yeast reproduction when a still wine will be sweetened. 7. Rack the Clear Wine

Place the full vessel above a clean receiving vessel and syphon the wine quietly, leaving the sediment behind. Keep the outlet below the surface where practical to limit splashing. Do not suck directly on the tube; use a suitable syphon starter or auto syphon.

8. Bottle the Wine

Bottle only when fermentation is complete, the wine is clear and any sweetening or stabilising stage is finished. Sanitise the bottles, closures, syphon and filling equipment. Fill consistently, leaving the headspace recommended for the closure, and avoid carrying sediment into the bottles.

9. Store and Mature

Store bottles upright initially if your cork instructions require it, then keep natural-cork bottles on their sides after the cork has seated. Choose a cool, dark place with a stable temperature. Many lighter wines become enjoyable within weeks, while premium or full-bodied reds often improve for several months. The kit instructions are the best starting point.

Making Wine From Fresh Fruit or Grapes

The broad process is similar, but the recipe determines whether fruit is crushed, steeped or pressed; whether skins remain during primary fermentation; and which additions are required. Red grape wines are commonly fermented with the skins for colour and tannin extraction, while white grape juice is normally separated from the skins before fermentation.

Fruit and flower wines may need grape juice concentrate for body and grape character, plus recipe-specific acid, tannin, pectolase or yeast nutrient. Do not apply one generic dose to every recipe or product.

Fresh fruit can carry wild yeast and microorganisms. Some recipes treat the must with Campden before cultured yeast is pitched, usually allowing a waiting period; follow the recipe and the particular tablet instructions carefully.

  • Repeated or unmeasured additive doses: sulphite, nutrient, finings and acids should be used according to the recipe or manufacturer.
  • Disturbing the sediment: move vessels carefully and syphon rather than pour.
  • Expecting young wine to taste finished: sharpness, trapped gas and rough flavours often soften with clearing and maturation.

How Long Does Homemade Wine Take?

Fast kits may complete their instructed production schedule in a few weeks, but “ready to bottle” and “at its best to drink” are not the same thing. Fermentation time depends on the kit, yeast and temperature; clearing and ageing depend on the wine style.

  • Light white and rosé kits often become approachable sooner.
  • Medium-bodied wines commonly benefit from one to three months.
  • Full-bodied and premium reds may improve over six to twelve months or longer.
