Choosing Beer Yeast

British ale strains can support malt character and gentle fruitiness, while cleaner American ale strains allow hops to lead. Lager yeast is used for crisp lager and pilsner styles. Belgian, wheat, saison and kveik strains provide more distinctive fermentation character.

Check each strain's recommended temperature range, attenuation and alcohol tolerance before pitching. Ferment within the manufacturer's guidance and use a hydrometer to confirm fermentation has finished.
