SafAle T-58 Belgian Ale Yeast
SafAle T-58 is a characterful ale yeast for beers where fruity and phenolic fermentation flavours are part of the style. Expect notes that can include banana, clove and pepper, making it particularly useful for Belgian-style ales and fruity-spicy wheat beers.
It is a good choice when you want the yeast to contribute noticeable flavour rather than simply ferment cleanly in the background.

How to Use
T-58 can be pitched directly onto the wort or rehydrated before pitching. Keep fermentation within the recommended temperature range and use the manufacturer's pitching rate for your batch size.
Substitutes
Mangrove Jack's M41 Belgian Ale is a strong alternative when you want spicy and phenolic Belgian character. Mangrove Jack's M31 Belgian Tripel is another option for Belgian-style beers, but it is more attenuative and tends to finish drier.
Brewer's Tip
T-58 is intentionally expressive. Use it when peppery, clove-like and fruity yeast character should form part of the finished beer rather than when you need a neutral fermentation.
