Mangrove Jack's M31 Belgian Tripel Yeast
Mangrove Jack's M31 is a very highly attenuative Belgian yeast that produces a complex mix of fruity esters, spice, phenolics and warming alcohol character.
It is designed for strong Belgian beers where a dry finish and pronounced fermentation character are both desirable.

How to Use
Sprinkle the contents directly onto up to 23 litres of cooled wort and ferment within the recommended temperature range. Strong wort may require a higher pitching rate.
Substitutes
SafAle BE-256 is a strong alternative for high-gravity Belgian ales, with a fruitier and generally less peppery profile. Mangrove Jack's M41 Belgian Ale is another highly attenuative, spicy and phenolic option.
Brewer's Tip
M31 is built to finish strong Belgian beers dry. Make sure the recipe and mash profile support that goal rather than relying on the yeast to leave substantial residual sweetness.
