Shop dried ale yeast for British, American, Belgian, wheat, saison and other top-fermented beer styles. The strain you choose influences fermentation speed, attenuation, body, clarity and whether the finished beer tastes clean, fruity, spicy or malt-led.
Choose an English strain for bitters, milds, porters and stouts; a neutral American strain when you want hops to lead; or a more expressive strain for Belgian, wheat and farmhouse styles. For hop-forward brewing, see our IPA yeast. Belgian, saison, wheat and kveik strains can also be compared in speciality beer yeast.
How to Choose Ale Yeast
Check the recommended fermentation temperature, attenuation and flocculation before choosing. Higher attenuation normally produces a drier beer, while a lower-attenuating strain can retain more body and malt sweetness. Always match the pitching rate to your batch size and original gravity.
