Mangrove Jack's M29 French Saison Yeast
Mangrove Jack's M29 is a highly attenuative Saison yeast for dry, characterful farmhouse ales with spicy, fruity and peppery fermentation notes.
It performs best considerably warmer than a typical ale strain, making correct fermentation temperature particularly important with this yeast.

How to Use
Sprinkle the contents directly onto up to 23 litres of cooled wort. For best results, ferment at 26–32°C rather than using a conventional cool ale fermentation.
Substitutes
SafAle BE-134 is the closest active alternative in our range for a dry, fruity, phenolic Saison. BE-134 is a diastaticus strain, so equipment hygiene after fermentation is especially important.
Brewer's Tip
Temperature matters with M29. Its current manufacturer guidance is much warmer than many standard ale strains, so fermenting it too cool can work against the profile the strain is selected to produce.
