Tartaric acid is the preferred acidity adjuster for most winemakers — the softest of the principal wine acids, and the one that occurs naturally in ripe grapes.
Use it to correct low acidity in grape wines and country wines, or to fine-tune the balance of a finished batch. Unlike citric or malic acid, tartaric integrates particularly well with alcohol, producing beneficial esters that enhance the bouquet over time.
