Tasting Notes

Bright, intense ruby-red with youthful purple tints and fresh fruit aromas. On the palate — plums and blackberries overlain with subtle violet notes, medium oak, great structure, and a long, intensely fruity finish. Improves with 1–2 months of bottle ageing as the tannins mellow and the fruit integrates further.

Brewing Tips

• Fermentation takes around 3–4 weeks at room temperature.
• Age for at least 1–2 months after bottling for best results.
• For greater body or depth, reduce the amount of water added slightly.
