Rich and fruit-forward with low tannins and a soft, mellow character — Merlot at its most approachable. Light oak adds gentle structure without overpowering the fruit. Pairs beautifully with light red meats, duck, game, and soft cheeses. Enjoyable from bottling but improves with 1–2 months of ageing.

Brewing Tips

• Fermentation takes around 3–4 weeks at room temperature.
• Age for at least 1–2 months after bottling for best results.
• For greater body or depth, reduce the amount of water added slightly.
