Tasting Notes
Full-bodied and dry with aromas of violets and cherries layered with subtle oak. On the palate — bright red berry fruit, a velvety texture, and pleasantly robust tannins. Like a true Barolo, it improves the longer you wait, but is smooth and enjoyable after just a few months. Pairs beautifully with roast beef, lamb, hearty pasta ragù, game, and strong cheeses like Parmigiano or Gorgonzola.

Brewing Tips
- Fermentation takes around 3–4 weeks at room temperature.
- Age for at least 2–3 months after bottling — the longer it matures, the smoother and richer it becomes.
- For crystal clarity, consider filtering with a Vinbrite filter before bottling.
