Carafa® Special Type 1 – Weyermann
The lightest of Weyermann's dehusked roasted malts, Carafa Special Type 1 delivers deep coffee and dark chocolate character with a polished, smooth finish. The husk is removed before roasting, eliminating the astringency and harsh bitterness that can come from traditional dark malts — leaving only clean roast depth and colour intensity.
Use at around 3% to lift roast clarity in porters or stouts, or push to 8–10% for mocha and espresso richness — softening with Vienna or Munich malts to maintain balance. For bold imperial styles, up to 15% is possible.

- Usage: Up to 5% standard; up to 15% in imperial styles
- Enzyme activity: None — always pair with a diastatic base malt
- Best for: Stout, Porter, Black IPA, Brown Ale, Altbier, Dunkel, Schwarzbier, Weizenbock
- Substitutes: Carafa Type 1 (husked, more astringent), Crisp Chocolate Malt, Crisp Black Malt (use sparingly)
Brewer's notes
Carafa Special Type 1 sits at the lighter end of the Carafa range — ideal when you want roast presence without going fully black. A great starting point if you're new to dehusked roasted malts, or when building a layered dark beer where subtlety matters.
