Carafa® Special Type 3 – Weyermann
The darkest of Weyermann's dehusked roasted malts, and the brewer's go-to for intense colour without harsh bitterness. Produced in Bamberg, Germany, Carafa Special Type 3 has its husk removed before roasting — the result is a cleaner, smoother roast profile with rich notes of espresso, cocoa, and dark toast, but none of the acrid bite of traditional black malts.
Use at 2–4% for smooth roast and colour without edge. Pairs especially well with Munich or Caramunich malts for added depth and richness.

- Colour: 1300–1500 EBC
- Flavour: Smooth espresso, roasted cocoa, dark toast
- Usage: Up to 5% of grain bill
- Best for: Stout, Porter, Black IPA, Schwarzbier, Altbier
- Substitutes: Carafa Type 3 (husked, more bitter), Crisp Chocolate Malt, Crisp Black Malt (use sparingly)

If you're building a black beer but want hop aroma or malt complexity to stay in focus, Carafa Special Type 3 is the right tool. The dehusked roasting process removes the astringency that can muddy a well-crafted dark beer — giving you colour and roast precision without compromise.
