Flaked Wheat โ Simpsons Malt
The go-to adjunct for haze, head, and that satisfying wheat beer softness. Simpsons Flaked Wheat is an unmalted adjunct with a high protein content that delivers foam stability, a crisper mouthfeel than wheat malt, and the turbidity that defines a proper NEIPA or witbier.
Traditionally used at 5โ10% in UK ales for head retention and wort nitrogen, but it scales right up to 20โ40% in wheat-forward styles without significant issues.

Brewer's notes
Flaked wheat is huskless, so at higher usage rates it can cause a sluggish lauter. Add rice hulls or a well-husked base malt to keep the mash flowing freely and avoid a stuck sparge.
