- Fermentation Temperature: 14–28°C
- Alcohol Tolerance: Up to 14% ABV
- Character: Varietal expression with body and mouthfeel
- Good For: Chardonnay, Semillon, Muscat, Pinot Gris, Merlot, Syrah, Pinot Noir and Cabernet Sauvignon styles
How to Use
Sprinkle directly onto the prepared must and ferment within the recommended range. Use suitable nutrient where the must is low in available nitrogen.
Substitute Yeasts
Gervin GV1 is a useful general-purpose alternative. Mangrove Jack's AW4 is better when aromatic white or rosé character is the main priority.
Winemaker's Tip
BV7 is a useful middle ground between a neutral workhorse strain and a highly style-specific aromatic yeast.
