Gervin GV11 Red Fruit Wine Yeast
Gervin GV11 is a fruit-led wine yeast for red fruit and country wines, particularly where a softer acid profile is useful.
It can metabolise some of the malic acid in the must, making it a practical choice for sharper berry and fruit wines.

How to Use
Sprinkle directly onto the prepared must and ferment within the recommended range. Use suitable wine yeast nutrient where the must is low in available nitrogen.
Substitute Yeasts
Mangrove Jack's CR51 is a good alternative for lighter, fruit-forward reds. Mangrove Jack's MA33 is the better choice when malic-acid reduction is the main priority.
Winemaker's Tip
Because GV11 can reduce malic acid, check the must's acidity before making additional acid adjustments rather than automatically following a fixed recipe.
