If you want a proper head on your pint, Torrefied Wheat is one of the most effective tools in the grain store. This unmalted adjunct has a high protein content that stabilises foam, adds body, and delivers greater head formation and retention than standard wheat malt — with a mild, nutty, bread-like character that complements virtually any style.
Unlike raw wheat, the starches in Torrefied Wheat are already gelatinised, meaning they're ready for conversion in the mash with no special treatment or adjustments needed.

- Colour: 2.5–4.5 EBC
- Flavour: Slight grain, bread-like
- Usage: Up to 10% for head retention; up to 40% in wheat beers
- Best for: All styles, British Ales, Witbier, Belgian Wheat Beer
Brewer's notes
Torrefied Wheat is huskless, so at higher usage rates it can slow your lauter. Add rice hulls or a well-husked base malt to keep the mash flowing freely. No pre-cooking or cereal mash required.
