A Simple 5-Litre Mead Recipe
A useful beginner range is approximately 1.4–1.8 kg of honey topped up with water to 5 litres. The exact amount depends on the honey, intended strength and desired sweetness, so use a hydrometer rather than relying on weight alone.
- Sanitise every item that will touch the must.
- Mix the honey with part of the water. Warm water helps it dissolve, but boiling the honey is unnecessary and can drive off aroma.
- Transfer to the fermenter and top up towards 5 litres, leaving enough headspace for the early fermentation.
- Mix thoroughly, check the temperature and take an original gravity reading.
- Add yeast and nutrient according to their current packet instructions and your chosen nutrient schedule.
Fermentation and Nutrient Additions
Honey provides fermentable sugar but relatively little yeast-assimilable nitrogen. A suitable nutrient helps the yeast ferment more reliably and reduces the risk of sluggish fermentation and harsh aromas.
Some mead makers divide the nutrient across the first few days rather than adding it all at once. This is called a staggered nutrient addition. Only use a schedule suited to the actual nutrient and yeast you have; products containing different nitrogen sources are not interchangeable gram for gram.
- Keep the fermenter within the yeast manufacturer's recommended temperature range.
- During the early active phase, gently release dissolved carbon dioxide before adding nutrient. Additions can foam rapidly.
- Once fermentation is established, minimise unnecessary opening and splashing.
- Judge progress with hydrometer readings, not airlock bubbles alone.
Racking, Clearing and Ageing
When vigorous fermentation has finished and a clear layer of sediment has formed, syphon the mead into a sanitised vessel. Leave the lees behind, minimise splashing and keep headspace small during longer ageing.
Do not rack simply because the airlock has slowed. Check the gravity first. Repeated transfers can introduce oxygen, so rack when there is a practical reason—such as removing the mead from a substantial sediment layer—not to a fixed calendar.
Mead may take several weeks or months to ferment and clear. A clean, well-managed lower-strength mead can become enjoyable sooner than a strong traditional mead, which may benefit from longer maturation.
Sweetening and Stabilising Mead
If the mead finishes drier than you want, it can be sweetened after fermentation. First confirm that the gravity is stable. For a still mead, potassium metabisulphite and potassium sorbate are commonly used together before adding more honey, following the product instructions.
If you want sparkling mead, do not use ordinary wine bottles. Bottle conditioning requires a measured priming addition, fermentation-confirmed dryness and pressure-rated bottles with suitable closures. Do not stabilise a batch that you intend to naturally carbonate.
Bottling Mead Safely
- Confirm stable hydrometer readings over several days.
- Make sure the mead is reasonably clear and no longer producing new sediment rapidly.
- Sanitise bottles, closures and the syphon.
- Transfer gently, leaving sediment behind and avoiding splashing.
- Use standard wine bottles only for still mead; use pressure-rated bottles for sparkling mead.
- Label each batch with the recipe, bottling date and final gravity.
Common Mead-Making Problems
Fermentation has not started
Check the temperature, yeast date, seal and gravity. Airlock inactivity does not prove that fermentation is absent. If the gravity is unchanged, review the yeast-pitching and nutrient instructions before making additions.
The mead smells of sulphur
This can be associated with yeast stress, unsuitable temperature or insufficient nutrition. Check the fermentation conditions promptly. Do not repeatedly expose an ageing mead to air in an attempt to remove aroma.
The mead tastes harsh
Young, strong mead can taste hot or disjointed. Confirm it is stable, protect it from oxygen and allow more time. Ageing can soften a sound mead, but it will not correct infection or serious oxidation.
The mead will not clear
Give it time and keep the temperature steady. Confirm fermentation is complete before using finings. Pectin haze is more relevant when fruit has been included.

How long does mead take to make?
Fermentation commonly takes several weeks, followed by clearing and maturation. Some modest-strength meads are ready within a few months; stronger traditional meads may improve for considerably longer.
Which yeast should I use for mead?
