Lalvin RC212 Red Wine Yeast
Lalvin RC212 is a red-wine yeast associated with Burgundy and Pinot Noir-style fermentations, supporting colour, structure and an expressive fruit profile.
It can contribute bright red-fruit, cherry and spicy character, but it has a high nutrient requirement and benefits from careful fermentation management.

How to Use
For best results, rehydrate the 5g sachet in about 50ml of clean water at 35–40°C. Stir gently and leave for about 20 minutes, then gradually acclimatise with a little must before pitching. Do not add sugar to the rehydration water.
Substitute Yeasts
Gervin GV8 is a good alternative for aromatic, fuller red wines. Mangrove Jack's R56 is another strong choice when body and mouthfeel are priorities.
Winemaker's Tip
RC212 is not a strain to underfeed. Its high nutrient requirement means an appropriate nutrient programme is particularly important, especially in low-nitrogen musts.
