Mangrove Jack's M21 is a Belgian wheat beer yeast that balances fruity esters with warming, spicy phenolic character.
Its lower attenuation leaves some fullness and sweetness, making it well suited to Witbier and other Belgian wheat styles where yeast character and a soft palate are important.

How to Use
Sprinkle the contents directly onto up to 23 litres of cooled wort and ferment within the recommended temperature range.
Substitutes
SafAle T-58 is a good option when you want more obvious spicy and phenolic Belgian character, though the finished beer will differ in attenuation and mouthfeel. Mangrove Jack's M47 Belgian Abbey is fruitier and less wheat-specific but works when a softer Belgian ale profile is preferred.
Brewer's Tip
M21 is deliberately expressive and relatively low attenuating. Use it when some residual body supports the style rather than when you need a very dry Belgian beer.
