Campden tablets are a staple of the homebrew cupboard — small sodium metabisulphite tablets that sanitise fruit musts, suppress wild yeasts and bacteria, and protect finished wines and ciders from oxidation.
Each tablet releases sulphur dioxide when dissolved, doing the same job as sodium metabisulphite powder but in a convenient, pre-measured form.

How to Use
- Sanitising fruit must: Crush 1 tablet per 4.5 litres (1 gallon), dissolve in the must, and leave for at least 24 hours before pitching yeast.
- Preserving at bottling: Crush 1–2 tablets per 4.5 litres and mix thoroughly. For best results, use alongside potassium sorbate.
Alternatives
Campden tablets can be substituted with sodium metabisulphite powder — dosage will vary, so follow your recipe. Potassium sorbate is commonly used alongside campden tablets (not instead of them) to stabilise and prevent re-fermentation in bottled wine and cider.
