Sodium metabisulphite — also known as campden powder — is one of the most versatile ingredients in the homebrew cupboard. A single tub covers equipment sterilisation, juice purification, and post-fermentation preservation.
Three Uses, One Ingredient
- Sterilising equipment: Dissolve 12.5g (approx. 2 tsp) in 1 litre of cold water to create a no-rinse sterilising solution. Note: this is a steriliser, not a cleaner — clean equipment first.
- Purifying juice: Add 0.5g (approx. 1/12 tsp) per 4.5 litres of juice. Mix well and leave in an open container for 24–48 hours before pitching yeast. This suppresses wild yeasts and unwanted bacteria.
- Preserving & stabilising: Use as an antioxidant to protect finished beer, cider, or wine from oxidation. For wine, use in conjunction with potassium sorbate for best results.
