Campden tablets are a staple of the homebrew cupboard — small sodium metabisulphite tablets that sanitise fruit musts, suppress wild yeasts and bacteria, and protect finished wines and ciders from oxidation.
Each tablet contains approximately 0.44g of sodium metabisulphite, giving you a convenient pre-measured dose without the need for scales.

What Campden Tablets Do
- Kill wild yeast and spoilage bacteria for a clean fermentation start
- Neutralise chlorine and chloramine in tap water — 1 tablet treats up to 75 litres
- Act as an antioxidant to protect flavour and colour during transfers and bottling
How to Use
- Sanitising fruit must: Crush 1 tablet per 4.5 litres (1 gallon), dissolve in a little water, and leave for at least 24 hours before pitching yeast.
- Preserving at bottling: Crush 1–2 tablets per 4.5 litres and mix thoroughly. For best results, use alongside potassium sorbate.
- Dechlorinating tap water: 1 tablet per 75 litres.
Alternatives
Campden tablets can be substituted with sodium metabisulphite powder at 0.44g per gallon. Potassium sorbate is commonly used alongside campden tablets (not instead of them) to stabilise and prevent re-fermentation in bottled wine and cider.
Note: always allow proper aeration after use. If you have a sulphite sensitivity, consult medical advice before use.
