CaraAmber Malt (Weyermann)
Weyermann CaraAmber Malt
CaraAmber malt is a light to medium caramel malt produced by Weyermann in Bamberg, Germany.
It adds smooth sweetness, warm colour, and flavour depth to amber and darker styles.
The flavour is toasty and rich without roast — think toffee, biscuit, and soft caramel.
It also improves head retention and body in the final beer.
Use at 5–15% of the grist for gentle caramel complexity or push higher in malt-driven lagers and ales where colour and mouthfeel are important.
Malt Profile
- Colour (EBC): 60–80 EBC
- Usage Rate: Up to 20% of grist
- Flavour Notes: Toffee, caramel, biscuit, toast
Flavour & Brewing Impact
CaraAmber brings warmth, smooth body, and layered caramel flavour without clashing with lighter malts or dominating yeast character.
It’s useful for colour adjustment and balancing drier or more bitter recipes.
Beer Styles
This malt fits cleanly into a range of amber and dark lagers, as well as malt-forward ales where colour and richness are welcome.
- Amber Ale: Adds colour and soft toffee notes with good body.
- Red Ale: Balances roast and bitterness with gentle caramel.
- Bock: Supports malt sweetness and helps with foam stability.
- Dunkel: Rounds out toast and grain character with a smooth finish.
- Altbier: Contributes body and dark biscuit malt complexity.
Malt Substitutes
CaraAmber can be swapped for other European mid-range caramel malts with similar EBC and flavour weight.
- Caramunich Type 1: Lighter, with more focus on sweetness than toast.
- Cara Gold: Slightly softer flavour, adds mild caramel colour and body.
- Crystal Light: Similar colour with a clean toffee backbone.
Brewer’s Tip
CaraAmber is a solid choice for layering over Pilsner or Vienna malt to deepen malt profile without excessive sweetness.
It’s also a great addition when you want to lift colour without pushing into roast or dark fruit territory.
