CaraAroma Malt (Weyermann)
Weyermann CaraAroma
CaraAroma malt is a dark caramel malt made by Weyermann in Bamberg, Germany.
It’s roasted to intensify colour and develop rich, toasted sweetness.
Use it to add deep caramel flavour, subtle dried fruit, and smooth roast complexity — especially in full-bodied, malt-driven styles.
Can be pushed higher in big beers like bocks, Baltic porters, or imperial styles where residual sweetness and body are welcome.
Malt Profile
- Colour (EBC): 300–400 EBC
- Usage Rate: Up to 15% of grist
- Flavour Notes: Dark caramel, raisin, toasted bread, soft roast
Flavour & Brewing Impact
CaraAroma enhances body, colour, and malt complexity without harsh roast.
Its smooth sweetness and rich fruit character help balance bittering hops and high ABV.
Beer Styles
Well suited to dark European styles, strong ales, and malt-forward recipes where depth and colour are key.
- Bock: Builds body and adds subtle dark fruit character.
- Porter: Adds depth without sharp roast or astringency.
- Stout: Supports chocolate and roast with dried fruit and caramel.
- Dunkel: Reinforces toast and colour in smooth dark lagers.
- Belgian Dubbel: Adds raisin and malt richness behind yeast character.
Malt Substitutes
CaraAroma can be substituted with other dark caramel malts, depending on desired colour and flavour strength.
- Crystal Dark: Slightly lighter in EBC, but similar toffee and raisin profile.
- Cara Gold: Softer flavour with more emphasis on dark fruit.
- Caramunich Type 2: Less roast, but useful for colour and caramel support.
Brewer’s Tip
Try using CaraAroma alongside Munich or Melanoidin malt to push rich malt character without overwhelming bitterness.
Great for lifting malt presence in high-ABV beers without drying them out.
