Young's Campden Tablets – Pack of 50

Campden tablets are pre-measured sodium metabisulphite tablets used in home wine, cider and mead making. They help suppress unwanted wild microorganisms in fresh fruit must, protect finished drinks from oxidation during suitable transfers and storage, and can remove chlorine or chloramine from brewing water.

What are Campden tablets used for?

Fresh fruit must: helps control wild yeast and spoilage organisms before a chosen cultured yeast is added.
Wine and cider protection: supplies sulphite that can help protect flavour and colour from oxidation when used at the correct stage and dose.
Brewing water: can neutralise chlorine and chloramine before brewing.

How to use Campden tablets

Crush the required tablet quantity, dissolve it thoroughly in a small amount of water and mix it evenly into the liquid. Dosage depends on the drink, stage of production, pH and the amount of sulphite already present, so follow the product label or your recipe rather than repeatedly dosing by guesswork.

For treating fresh fruit juice or must, a common homebrew recipe rate is approximately one tablet per 4.5–5 litres, followed by a wait of around 24 hours before adding cultured yeast.
For chlorine or chloramine removal, only a much smaller proportion is generally needed; one standard tablet is commonly used for up to about 75 litres of brewing water. Treat the water before adding brewing ingredients.

Campden tablets do not reliably stop an active fermentation. If a finished wine or cider will be sweetened, use an appropriate stabilisation method and follow the instructions for any complementary product, such as potassium sorbate.
