SafAle WB-06 Wheat Beer Yeast
SafAle WB-06 is a highly attenuative wheat beer yeast selected for fruity and phenolic fermentation character. It is designed for wheat-led beers where expressive yeast notes are an important part of the finished pint.
The strain is Saccharomyces cerevisiae var. diastaticus and is POF positive, so it can ferment more completely than many standard ale strains and produce the dry, characterful profile associated with this style.

How to Use
WB-06 can be pitched directly onto the wort or rehydrated before pitching. Keep fermentation within the recommended temperature range and use the manufacturer's pitching rate for your batch size.
Important: Because WB-06 is a diastaticus strain, clean and sanitise fermentation equipment thoroughly after use to reduce the risk of cross-contamination into later beers.
Substitutes
Mangrove Jack's M20 Bavarian Wheat is the closest active alternative in our range for classic wheat beer fermentation. M20 gives strong banana and clove character but attenuates less, so the finished beer will generally be fuller-bodied than one fermented with WB-06.
Brewer's Tip
WB-06 is best used when you specifically want a dry, expressive wheat beer. Do not treat it as a neutral general-purpose ale yeast because both its phenolic character and diastaticus behaviour are important parts of the strain.
